Just made this for tomorrow’s thanksgiving nut loaf. I fried the veggies without oil (I eat wfpbno) and added a little red wine to the broth. It’s absolutely delicious.

For anyone trying this at home, do not add flour after you've added the broth! I found it's better to just reduce it a bit if its not as thick as you want.
