I went vegan 3 months ago and was craving Mac & cheese. This recipe was pure gold, it made 2 servings for me. I did add a little Cajun season for extra little flare but it didn’t need any modifications!

It comes together quick and is sooo tasty, plus the clean up is easy with it being one pot. I have tried with a bunch of different spice combos as well as different veggie add ins like sautéed cherry tomatoes, peppers and mushrooms to name a few and it always turns out great.
